Nerum is a thick, sweet, and mildly sour product with a fabulous aroma. For those who love a sweeter balsamic flavor, this is sure to be a favorite. Nerum is made from 80% cooked grape must and 20% wine vinegar. The grapes selected for this are Lambrusco Ancellotta, which are known for their deep, black color, and Spergola, which give the product its special sweetness. The grapes used in this product are selected late in the harvest, when they are more mature. The cooking process adds a thickness to Nerum that helps it cling to any dish you decide it will complement. Nerum is particularly good with seasoned cheeses, figs, apricots, pears, salads, vegetables or salty meats like Prosciutto.
